Steak tartare

INGREDIENTS

  • For 4 people
  • 500g of roughly minced steak
  • 2 white onions
  • 1/2 bunch of parsley
  • 8 cornichons
  • 4 teaspoons of capers
  • 1 tablespoon of Senchou tomato ketchup
  • 1 teaspoon of Worcestershire sauce
  • A few dashes of Tabasco
  • 1 tablespoon of mustard
  • 1 tablespoon of olive oil
  • 4 egg yolks
  • Salt
  • Pepper

1. Start by preparing your seasoning. Peel the onions then dice them finely along with the parsley, capers and cornichons. Place the mixture in a large bowl, then add the Senchou ketchup, Tabasco and mustard. Season with salt and pepper then mix well with a fork.

2. Add your mince to the bowl. Mix everything together again using a fork.

3. To serve, split the mixture into 4 equal portions and place on the 4 plates. Use a circular pastry cutter if necessary to achieve a round and even shape.

4. Separate the 4 egg yolks from the whites, then place a yolk on each of your 4 steak tartares.

Serve the steak tartares with a salad or some home-made sweet potato fries!”
