Crispy Smashed Potatoes

INGREDIENTS

For the potatoes

  • 1kg potatoes
  • 1/4 cup olive oil
  • 1 clove garlic, grated
  • 1 teaspoon paprika
  • 1 teaspoon gochugaru
  • 1 tablespoon gochujang

Chive sauce :

  • Salt
  • Pepper
  • 1 teaspoon mustard
  • 40 g butter
  • 25 cl crème fraiche
  • 6g Marcel Senchou chives
  • 2 cloves of garlic

  1. Boil your potatoes in salted water until tender. Preheat the oven to 200 degrees.
  2. Mix the boiled potatoes with olive oil, grated garlic, paprika, gochugaru, salt and pepper. Spread the mixture on a baking tray lined with baking parchment.
  3. Mash the potatoes with a cup and spread the rest of the seasoning over the baking tray.
  4. Bake in the oven for around 30 minutes, turning the potatoes halfway through cooking.
  5. Meanwhile, prepare the chive sauce. Melt the butter in a saucepan over a low heat. Stir in the crème fraiche and mustard. Season to taste and add the chopped chives and pressed garlic. Leave on a medium heat for around 5 minutes.
  6. Once the mashed potatoes are ready, garnish with chopped parsley, lemon juice, zest and grated Parmesan. Serve with the chive sauce and enjoy!
